Meatless Monday - Chocolate Peanut Butter Truffle Pie - HOME ...

Need a last minute dessert idea for your New Year's Eve festivities? This sweet treat comes together so quickly it gives new meaning to the phrase "easy as pie"! And it's so delicious that your fellow party-goers won't even notice how healthy it is!

Ingredients:

• 1 cup semi-sweet chocolate chips
• 12 ounce package silken tofu
• 1/2 cup maple syrup?1 cup natural peanut butter?1 9-inch premade graham cracker crust
• 1/2 cup chopped chocolate-covered pretzels (Trader Joe?s carries vegan chocolate covered pretzels)

Directions:

1. Melt the chocolate chips in a double boiler. (I fill a small sauce pan with water and then place another pan that?s about the same size on top. I turn the burner on low and stir constantly.)
2. Mix the melted chocolate, tofu, maple syrup and peanut butter in a food processor or high speed blender until all ingredients are blended and smooth.
3. Pour the contents into the crust and refrigerate for a few hours, until the filling is firm.
4. Sprinkle the pretzels over the top of the pie and gently press them down into the pie filling, so they won?t fall off when you slice it.
5. Slice and watch it disappear!

Sour end to 2012 masks positive trends in America

CHICAGO (Reuters) - Many Americans seem to be in a sour mood as 2013 begins, after Hurricane Sandy ravaged parts of the East Coast, a gunman massacred 20 school children in Connecticut and a long, contentious election campaign was followed by failure to resolve the "fiscal cliff" issue by year-end.

Americans have not been very optimistic since the Great Recession of 2008-2009, but the gloom had begun to lift this year until the blast of bad news as 2012 ended, IPSOS pollster Cliff Young said on Monday. IPSOS polling showed that some angst set in as the year ended.

Sixty-eight percent of respondents said the economy was on the wrong track at the end of 2012, IPSOS said, and 64 percent had a negative opinion of national politics.

"I do think these events had some sort of effect on people's short-term prospects," Young said.

But the headlines of 2012 belie a number of positive underlying trends in America, and Young said he expects public opinion to turn more positive in the new year.

Here is a summary of some of the positive trends in health, health, security, the environment, personal finance and education:

COLLEGE EDUCATION: More than 30 percent of Americans 25 years of age or older have finished four years of college, the highest level since 1940. Another 26 percent of adults have completed one to three years of college such as a community college, according to Census Bureau data.

This is important because the lifetime earnings of a person with a college associate's degree working from age 25 to 64 will be $442,000 more than that of a high school graduate. A bachelor's degree could yield $1 million more in lifetime earnings, a Census Bureau study found.

CONSUMER DEBT: While Americans are known as big spenders on credit, some surveys show that since the Great Recession of 2008-09, consumers are becoming more frugal. The average consumer with an account had credit card debt of $5,371 in November, 2012, down from $6,503 the same month a year ago, according to consumer organization Credit Karma. Average mortgage and auto debt also was down and even student loan debt, which has been rising, inched lower in November.

The end of the year usually brings increases in credit card debt due to holiday shopping, but consumers seem to be spending more responsibly and paying more with cash. Spending has been more conservative in general over the last four years since the recession, and credit card companies are lowering debt limits, Credit Karma said.

CHARITABLE GIVING: Despite the uncertain economy, Americans continue to be generous to charities. Donations rose to $298.42 billion in 2011, the highest since the Great Recession, although giving has not yet reached pre-recession levels.

Giving by Americans increased 4 percent in 2011 compared with 2010, with individual donations accounting for nearly three-quarters of the total, according to the 57th annual report by the Giving USA Foundation and the Center on Philanthropy at Indiana University.

Corporate donations remained flat at $14.5 billion last year, foundations made almost $42 billion in grants - an increase of 1.8 percent - while gifts from estates jumped more than 12 percent to $24.4 billion.

The money went to around 1.1 million registered charities and some 222,000 American religious groups.

Religious groups received the most donations - about one- third of the total - but dropped 1.7 percent in 2011 to $95.8 billion. The only other sector to record a drop in donations was giving to foundations, which fell 6.1 percent to $25.8 billion.

CANCER: Cancer claims the lives of more than half a million Americans every year and is the second leading cause of death after heart disease. But the numbers of deaths and people afflicted with the disease continue to decline, according to the Centers for Disease Control and Prevention. While the latest data is for 2008, officials said the trend continued in more recent years.

The federally funded CDC attributes the decline to identifying populations with unhealthy sedentary lifestyles and obesity, and intervening in a targeted way to improve their health and prevent cancer.

The highest rate of cancer deaths in the United States is for lung cancer, followed by prostate, breast cancer among women, colon, pancreatic, ovarian cancer and leukemia.

While lung cancer causes a greater rate of deaths, it is not the most frequent cancer. More Americans contract prostate cancer than any other type of the disease, followed by women with breast cancer. Lung cancer is third, followed by colon cancer, women with cancer of the uterus, and urinary bladder cancer.

SMOKING: The number of Americans who smoke continues to gradually decline, to 19 percent of adults over 18 in 2011, the latest year for which statistics are available, from 19.3 percent in 2010. The news is even better for young adults: the rate of smoking among 18- to 24-year-olds dropped to 18.9 percent in 2011 from 24.4 percent in 2005.

The best trend of all is that four out of five teenagers do not smoke, and teen smoking has been on the decline since 2000, although the rate of decline has slowed.

Fewer people addicted to tobacco means lower health costs and fewer deaths, such as from lung cancer, down the road, according to the CDC.

TEEN PREGNANCY: The number of births to girls aged 15 to 19 fell 8 percent in 20ll to a record low level. Teens seems to be less sexually active and more of those who are active seem to be using birth control, the CDC said.

CHILD OBESITY: After years of grim news about Americans getting fatter and sedentary, overweight children fixated on video games, the first signs of hope emerged this year. The CDC said new data showed a "modest" decline in child obesity in recent years. Two possible reasons - higher rates of breastfeeding and rising awareness of the importance of physical activity among young kids. A CDC study found 13 percent of preschoolers surveyed were obese in 1998, growing to 15 percent in 2003, but again falling below 15 percent by 2010, the most recent study year.

DRINKING AND DRIVING: The incidence of Americans driving after drinking too much has declined by 30 percent over the past 5 years although it remains a serious problem. Four-in-five drunk drivers are men and especially men from ages 21 to 34.

The best news is that drinking and driving among teenagers has fallen 54 percent since 1991. Only about 10 percent of teens ages 16 years or older had driven after drinking in 2011 compared with more than 20 percent two decades ago.

The reasons for this success include a minimum drinking age of 21 in all states, zero tolerance laws, graduated drivers' license systems and better parental monitoring, according to the CDC.

LAW ENFORCEMENT DEATHS: Deaths of law enforcement officials in the line of duty fell by 23 percent in 2012 after two years of sharp increases. Some 127 federal, state and local officers were killed, with traffic accidents the top cause of death, followed by shootings.

The National Law Enforcement Officers Memorial Fund attributed the reduction to better safety for police such as use of bullet-proof vests.

While national headlines have regularly featured terrible shootings such as those at an elementary school in Newtown, Connecticut and a movie theater in Aurora, Colorado, the number of police officers killed in shootings fell 32 percent in 2012.

AIR QUALITY: In 2010, about 90 million tons of pollution were emitted into the atmosphere in the United States, according to the Environmental Protection Agency. These emissions form ozone and particles, reduce visibility and deposition of acids, and visibility impairment.

But the good news is that pollution in the air we breathe is down substantially in all categories. In the three decades since 1980, emissions of carbon monoxide from cars, ozone, lead, nitrogen, sulfur and particulate matter such as soot all have declined. Carbon monoxide is down 82 percent, lead down 90 percent, nitrogen down 52 percent and sulfur declined 76 percent.

TRASH: Americans generated about 250 million tons of trash in 2010, most of which fouls the environment or goes into landfills. We may be starting to reform our wasteful ways, according to data from the EPA. The amount of waste generated per person per day had declined to 4.43 pounds by 2010 from 4.67 pounds five years earlier, according to the EPA.

Another positive trend is that recycling is increasing. Of the 250 million tons of trash produced in 2010, more than 85 million tons or 34.1 percent was recycled or composted.

Adrian Peterson nearly ran into the NFL record book, falling 9 yards short of breaking Eric Dickerson's single-season rushing mark.

Peterson had 199 yards and a touchdown in Minnesota's 37-34 victory over the Green Bay Packers on Sunday, becoming the seventh NFL player to rush for 2,000 yards in a season. He needed 208 when the day began to top Dickerson's record of 2,105 set in 1984.

"I know Eric Dickerson is feeling so good right now," Peterson said with a chuckle, referencing comments Dickerson made a few weeks back saying he hoped Peterson didn't break his record. "But God willing, I'll get it next year."

Peterson, who finished the regular season with 2,097 yards on the ground, also tied Hall of Famer Earl Campbell's single-season mark with his seventh game of 150 yards rushing or more.

"He is without question the best running back in our game and truly, in my mind, the MVP of our league," Vikings coach Leslie Frazier said after his team earned a playoff spot with the win.

Seattle quarterback Russell Wilson tied Peyton Manning's NFL record for most touchdown passes by a rookie with 26 after a third-quarter score in a 20-13 win over St. Louis.

"To tie that record is really something special," Wilson said. "It's a tribute to my faith and all God has put me through, but also to my team and what they've done."

Manning threw for three touchdowns in a game for the 73rd time, surpassing the record set by Brett Favre. Manning finished 23 of 29 for 304 yards in Denver's 38-3 romp over Kansas City.

Lions wide receiver Calvin Johnson narrowly missed becoming the first player with 2,000 yards receiving in a season. Johnson, who broke Jerry Rice's record of 1,848 yards receiving the previous weekend, finished at 1,964 after catching five passes for 72 yards. He also had his record streak of eight 100-yard receiving games snapped.

"Had a good year, but there's a lot of things that could have been done better," Johnson said. "There's always room to get better."

South Africa's Mandela convalesces, legacy secure

JOHANNESBURG (AP) ? South Africa's agonizing past swept over Alex McLaren, who stepped into sunlight with tears in his eyes after a tour of the Apartheid Museum, an unsparing study of white minority rule and the costly fight against it.

Yet South Africa-born McLaren, an American citizen, also found inspiration within the bleak brick, concrete and steel of the museum, which includes an exhibition about Nelson Mandela, former prisoner, South Africa's first black head of state and one of the great, unifying figures of the 20th century.

Mandela, now 94 years old and ailing, was a special figure in the anti-apartheid struggle because of "his perseverance, his ability to forgive and to reconcile, and the fact that he appeared when he did, him and others. But mainly him," said McLaren, a retired engineer.

"There will be a lot of wailing, gnashing of teeth, when he goes," he said, anticipating the grief of South Africa and the world.

The delicate health of Mandela, now convalescing behind the high walls of his Johannesburg home, came under scrutiny and speculation during a 19-day stay in a hospital in December. He was treated for a lung infection and had gallstones removed. Regardless of when the end comes, his burnished legacy was written years ago, even if the country he led from the long night of apartheid still struggles with poverty and other social ills.

Mandela's place as South Africa's premier hero is so secure that the central bank released new banknotes in 2012 showing his face, a robust, smiling image of the icon who walked out of a prison's gates on Feb. 11, 1990 after 27 years in captivity. He is a Nobel laureate, the recipient of many other international awards, the subject of books, films and songs and, when he was active, a magnet for celebrities.

In part, what elevated Mandela was his charisma, his ability to charm through humor and grace, and an extraordinary capacity to find strength in adversity.

"People tend to measure themselves by external accomplishments, but jail allows a person to focus on internal ones; such as honesty, sincerity, simplicity, humility, generosity and an absence of variety," Mandela says in one of the many quotations on display at the Apartheid Museum. "You learn to look into yourself."

Early in his career, he wore the same suit for years because he was poor, but eventually became a sharp dresser as a lawyer and activist. In the early 1960s, the media called him the "Black Pimpernel" while he was on the run, a reference to the "Scarlet Pimpernel," a novel about a dashing English hero and master of disguises who eluded a manhunt around the time of the French Revolution.

As a post-apartheid statesman, loose, colorful shirts became his trademark garb. The style was introduced to him by Suharto, the Indonesian authoritarian leader who was toppled by protests and economic turmoil in 1998.

Amid this global acclaim and imagery, Mandela gave South Africans, in the simplest terms, the chance to feel better about themselves after grinding years of conflict, humiliation and international isolation. Crucially, he beckoned compatriots of all races and political shades, dampening the sting of defeat for South Africa's former white masters.

"Never, never and never again shall it be that this beautiful land will again experience the oppression of one by another and suffer the indignity of being the skunk of the world," Mandela said at his presidential inauguration on May 10, 1994.

Mandela, however, could not satisfy all factions in a nation where the economic spoils were stacked in favor of the white minority and the black majority lacked skills and education. The ruling African National Congress, steeped in the culture of struggle, had to run a government, deliver services and tackle corruption within its own ranks. Its record, then and now, is decidedly mixed.

Perceived successes include, on Mandela's watch, the introduction of one of the world's most progressive constitutions and the Truth and Reconciliation Commission, a panel that heard testimony about apartheid-era violations of human rights as a kind of national therapy session. He retired after only one term as president, raising questions about whether he was too trusting in aides and had taken too light a touch on some urgent issues such as the looming AIDS crisis.

Today, the government says it is still in a process of "nation-building" that entails lifting up South Africans, many of them black, who lack jobs and other opportunities long after apartheid.

"We have to hasten our drive towards attaining socio-economic freedom," President Jacob Zuma said in his New Year's message. He cited an increase in income and education levels, but noted "deep income disparities" in recent census data that showed the income of a white household is six times that of a black household.

Peter Attard Montalto, an analyst for financial services company Nomura, said the South African economy is struggling and warned of a risk of labor unrest in 2013. South Africa has recently seen credit downgrades, and several dozen people were killed, mostly by police, at a platinum mine that was swept up in industry protests.

"South Africa appears to be in a 'grinding underperformance' scenario which has risks to social stability from a lack of development, not the 'blow-up/Zimbabwe' scenario of the doom-mongers," Montalto wrote in a report.

McLaren, the visitor to the Apartheid Museum, grew up in South Africa and recalled witnessing injustices of apartheid: blacks being arrested or stopped in the street, a black woman being pushed off a bus and a view among many whites that blacks were "somehow inferior."

Now a resident of Scottsdale, Arizona, 66-year-old McLaren said: "South Africa is such a mixed place now. Some of it is falling apart, some of it is really good, some of it is really bad. But you know, it's much better than it was, much better than it was."

An imperfect country, but one that Mandela, whose clan name, Madiba, means "reconciler," guided elegantly through a painful transition.

In "Mandela: The Authorized Portrait," a collection of accounts about Mandela, lawyer and human rights advocate George Bizos described how Mandela joked about his age (he was 86 at the time) and said he would join "the nearest branch of the ANC in heaven."

Bizos related in the book how he once told Mandela about Socrates, the ancient Greek philosopher who was sentenced to death and said he hoped to meet Homer, Sophocles and other giants for eternal discussions in the afterlife.

According to Bizos, Mandela replied:

"But assume that there is no such thing. Have you ever had a night's sleep when you were not disturbed at all ? no dreams, no fears ? you just slept throughout the night? Didn't you feel very much happier? Can you imagine if there is this eternal sleep it's also all right? So what's there to be afraid of?"
